Apricot Macaroni Salad Recipe


  • 8 oz macaroni: cooked and drained
  • 20, oz pineapple chunks, drained
  • 1/2 cup chopped red or green or combos of both bell peppers
  • 1/2 cup shredded cheddar cheese
  • 2/3 cup mayonaisse
  • 1/2 cup apricot preserves
  • salt and pepper to taste
