Apricot Ginger Pinwheel Cookies Recipe

Ingredients

  • 2 cups chopped dried apricots (8 ounces)
  • 2 tablespoons minced crystallized ginger
  • 11/3 cups water
  • 2/3 cup granulated sugar
  • 1/4 teaspoon ground cardamom
  • Dough:
  • 3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup unsalted butter, softened (2 sticks)
  • 11/4 cups firmly packed light brown sugar
  • 1/2 cup finely chopped pistachio nuts

Description

These Are So Awesomely Good You Won't Be Able To Keep Your Hands Off Them To Let Them Cool. Found In Newspaper. They Take Alot Of Prep But So Worth It. There's A 4 Hour Chill Time That I Didn't Put In The Prep Time.
