Ingredients

  • 1 bag of multigrain corn chips
  • 1/2 lb of lean ground beef, cooked
  • 14 grape tomatoes,cut in half
  • 1/2 small onion, chopped
  • 1 medium carrot, grated
  • 4 asparagus spears
  • 1/2 red bell pepper, chopped
  • 1 tsp minced garlic
  • 1 1/2 cups of grated cheddar cheese, divided
  • 2 tsp low sodium taco seasoning
  • 1/2 tbsp canola oil
  • 1 tsp dried parsley
  • pinch of salt and pepper
