- 1/2 small onion, chopped

- 4 asparagus spears
- 1/2 red bell pepper, chopped
- 1 tsp minced garlic
- 1 1/2 cups of grated cheddar cheese, divided
- 2 tsp low sodium taco seasoning
- 1/2 tbsp canola oil
- 1 tsp dried parsley
- pinch of salt and pepper
