Ingredients
- 1/2 cup boiling water
- 1/2 cup creamy peanut butter
- 1/4 cup bottled chili sauce
- 3 Tbsp soy sauce
- 2 Tbsp cooking oil
- 2 Tbsp vinegar
- 4 cloves garlic, minced
- 1 Tbsp grated fresh ginger
- 1/4 tsp cayenne pepper
- 12 chicken thighs skinned(my wife likes boneless too)
- 1 recipe fresh peach salsa ( recipe follows)
- hot cooked rice (optional)
- peach salsa
- 1 cup chopped peeled peaches, pears, and plums
- 1cup chopped seeded cucumber
- 2Tbsp thinly sliced green onion
- 2 Tbsp cilantro
- 1 Tbsp sugar
- 1 Tbsp each cooking oil and vinegar
- Cover and Chill 1 to 2 hours. Makes about 2 cups
