Roasted Spring Chicken & Vegetables Recipe

Ingredients

  • 3 1/2 pounds chicken quarters, skin-on and bone-in
  • sea salt & black pepper, freshly ground
  • juice from one medium-large lemon
  • 1 pound fingerling potatoes (or other small potatoes)
  • 1 bunch radishes
  • 1 bunch scallions
  • 1/2 pound baby carrots (other carrots are fine, just cut in half & then chunks)
  • 3 tbsp olive oil
  • 1/4 chopped fresh dill
