Artichoke Couscous Salad Recipe

Ingredients

  • 1/2 teaspoon salt
  • 2-1/4 cups boiling water
  • 1/4 cup diced red onion
  • 3 cans artichoke hearts rinsed, drained and quartered
  • 1/2 cup chopped fresh basil
  • 2 garlic cloves minced
  • 3 tomatoes chopped
  • 2 tablespoons herb flavored olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1 avocado diced
