- 4 medium sized globe artichokes

- to make 1/2 pint
- 8 cloves of garlic peeled

- 2 egg yolks
- 1/2 pint olive oil
- ground black pepper
- few drops of lemon juice

- Crush the garlic, place the egg yolks in a bowl beat with the garlic and a little salt.
- Add the olive oil drop by drop beating well between each addition.
- When the mixture thickens and becomes more creamy.
- You can now add the remaining oil in a thin steady stream.
- Beating all the time add a little ground black pepper and the lemon juice.
- Check the seasoning you can store the sauce for a few days in a screwtop jar in the fridge.
