Albondigas Recipe

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/4 cup yellow cornmeal or soft corn tortilla crumbs
  • 1/2 cup onion; minced
  • 1/2 teaspoon garlic clove; minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon fine ground black pepper
  • 1/2 teaspoon dried crushed basil leaves
  • 1 each egg; beaten
  • 12 cups stock, beef
  • 4 cups diced tomatoes with juice; or diced canned tomatoes
  • 1/4 cup jalapeños en escabèche; seeded and diced*
  • 3/4 cup onion; finely chopped
  • 1-1/2 teaspoons dried crushed basil leaves
  • 1-1/2 teaspoons dried crushed Mexican oregano leaves
  • 1/2 teaspoon Tapatío salsa Picante; or Tabasco hot sauce
  • 2 teaspoons salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 cup long-grain white rice
  • 1/2 cup cilantro; chopped
  • 4 cups water
