Aztec Onion And Lime Soup With Blue Corn Dumplings Recipe

Ingredients

  • 3 tablespoons corn oil
  • 4 medium yellow onions thinly sliced
  • 5 garlic cloves finely chopped
  • 3 jalapenos seeded chopped fine
  • 1 large tomato peeled seeded and chopped
  • 5 cups chicken stock
  • 1/4 cup lime juice
  • 1 tablespoon finely grated lime zest
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Dumplings:
  • 1 cup blue corn flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons vegetable shortening
  • 1 egg
  • 1/2 cup milk
  • 2 tablespoons finely chopped cilantro

Description

This Is A Very Hearty And Very Different Yet Very Tasty Soup. I Love It And Make It In Double Batches So I Have Enough Left For A Couple Of Days Lunch. Better The Next Day. Yummo. Enjoy
