Ingredients
- olive oil
- 8 chicken thighs with skin
- salt
- 1/2 pound pancetta cut into 1/2 inch dice
- 2 large onions, julienned
- Pinch of crushed red pepper flakes
- 4 cloves garlic, smashed
- 2 pounds assorted mushrooms, sliced
- 2 cups dry white wine (semi-dry is OK)
- 4-6 cups chicken broth
- 1 bundle (?) thyme (ground is OK)
- 4 bay leaves
- 1/2 cup sliced almonds, toasted (6-8 minutes at 350)
- Chopped chives for garnish
