- 1 tablespoon granulated onion
- 1-1/2 teaspoons celery seed
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon dried thyme
- 2 pork tenderloins about 14 ounces each
- 2 teaspoons olive oil
- 2 cups apple wood chips
- 1 cup apple wood chips soaked in water for 30 minutes
- Basting Liquid:
- 1/3 cup spice blend
- 1 cup chicken stock
- 2 tablespoons canola oil
- 1 tablespoon cider vinegar
- 2 tablespoons pure maple syrup
- Sauce:
- 1/2 cup creole mustard
- 3 tablespoons pure maple syrup
