Smoked Pork Tenderloin Recipe

Ingredients

  • 1 tablespoon ground allspice
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated onion
  • 1-1/2 teaspoons celery seed
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried thyme
  • 2 pork tenderloins about 14 ounces each
  • 2 teaspoons olive oil
  • 2 cups apple wood chips
  • 1 cup apple wood chips soaked in water for 30 minutes
  • Basting Liquid:
  • 1/3 cup spice blend
  • 1 cup chicken stock
  • 2 tablespoons canola oil
  • 1 tablespoon cider vinegar
  • 2 tablespoons pure maple syrup
  • Sauce:
  • 1/2 cup creole mustard
  • 3 tablespoons pure maple syrup
