- 1, 14 oz can diced tomatoes
- 1 bay leaf
- 1 1/2 cups shelled edamame ( soybeans )or use snow peas
- 1 qt vegetable ( or chicken ) broth
- 1 large sweet potato, diced
- about 3/4 cup peanut butter
- 1/4 cup chopped fresh cilantro
- 1 small bag of baby spinach ( 5 oz )
- salt and pepper to taste
