Pad Thai Recipe

Ingredients

  • 4 tbsp vegetable oil or canola oil, or olive oil (divided)
  • 2 cloves garlic, minced
  • 4 shallots, thinly sliced
  • Fresh red chili peppers
  • Any fresh vegetables you want to use (I used asparagus & snow peas)
  • 12-16 fresh medium sized shrimp, cleaned and deveined (or 8 oz. chicken or diced tofu)
  • 2 eggs, lightly beaten
  • 1 bundle Pad Thai rice noodles (cooked, drained and rinsed as directed for stir fry)
  • 1 cup fresh bean sprouts
  • 3 Tbsp brown sugar
  • 4 Tbsp fish sauce
  • 5 Tbsp lime juice
  • 1 Tsp Crushed chilies, red pepper (your choice)
  • Fresh cilantro
  • green onions (scallions)
