Ingredients
- 4 tbsp vegetable oil or canola oil, or olive oil (divided)
- 2 cloves garlic, minced
- 4 shallots, thinly sliced
- Fresh red chili peppers
- Any fresh vegetables you want to use (I used asparagus & snow peas)
- 12-16 fresh medium sized shrimp, cleaned and deveined (or 8 oz. chicken or diced tofu)
- 2 eggs, lightly beaten
- 1 bundle Pad Thai rice noodles (cooked, drained and rinsed as directed for stir fry)
- 1 cup fresh bean sprouts
- 3 Tbsp brown sugar
- 4 Tbsp fish sauce
- 5 Tbsp lime juice
- 1 Tsp Crushed chilies, red pepper (your choice)
- Fresh cilantro
- green onions (scallions)
