- 4 thick pork chops
- 1/2 cup white wine
- 2 fresh bay leaves
- 2 sprigs sage
- 2 white onions finely sliced
- 1 carrot quartered lengthwise
- 6 garlic cloves crushed
- 1 tablespoon juniper berries crushed
- 1/2 cup chicken stock
- 1 cup gin
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 pound jar prepared sauerkraut well rinsed under cold running water
- Sprigs of watercress for garnish
