Almond Meal Waffles Gluten Free Recipe

Ingredients

  • 1 1/4 C. gluten free All Purpose Flour (Bob's red mill)
  • 1/4 C. almond meal (made by grinding raw almonds in a coffee grinder or you can buy pre-ground)
  • 1 Tbsp. flax seed meal
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. Xanthan gum powder
  • 1/2 tsp. salt
  • 1 Tbs. Agave
  • 2 eggs, separated
  • 3/4 C. rice milk or other substitute
  • 1/4 C. seltzer water
  • 3 Tbsp. Spectrum shortening, melted (or other oil substitute)
  • 1/2 tsp. vanilla extract

Waffles With A Nice Texture, The Almond Meal Lends To A Denser And Non-gritty Gluten Free Waffle. The Best We've Come Across So Far. Recipe Based On Ellen Allard's Gluten Free Waffles, With A Couple Modifications.
