Armenian Pizza- Lahmejun Recipe

Ingredients

  • Dough:
  • 1 pkt yeast
  • 1/4 cup warm water
  • or 1 cake compressed yeast crumbled in 1/4 cup lukewarm water
  • 1 1/2 tsp sugar
  • 1 1/2 tsp salt
  • 3/4 cup warm water
  • 1/4 cup soft shortening ( I use Crisco type )
  • About 3 cups flour- see below
  • Meat Mixture:
  • 1 1/4 lb lean ground lamb
  • 2/3 cup fresh chopped parsley
  • 1/2 cup fresh chopped green or red bell pepper
  • 1 large garlic clove minced or use 2
  • 1/4 to 1/2 tsp allspice
  • 1/4 to 1/2 tsp black p[epper
  • 1 pinch red hot pepper
  • 1 3/4 cup to 2 cups canned tomatoes mashed ( or half canned and half fresh ripe, grind ripe ones )
  • 3 Tbs tomato paste
  • 3 to 4 tsp salt
