Artichoke And Mushroom Stuffed Chicken Thighs Recipe


  • 3lbs boneless chicken thighs(or breasts), pounded even, if necessary
  • 12oz fresh mushrooms, diced
  • 2 green onions, sliced
  • Juice from 1/2 lemon
  • 8oz jar artichoke hearts in water(if you must get brined, please rinse well), chopped
  • 3 cloves garlic, minced
  • 4oz goat cheese
  • 4T butter, softened
  • several sprigs of fresh thyme, chopped
  • 1t poultry seasoning(or equivalent)
  • salt and fresh ground pepper
  • 2T olive oil
  • Old Bay seasoning or paprika


This Easy Stuffed Chicken Recipe Uses Some Earthy Ingredients And Creamy Goat Cheese To Give A Classy, Rich Flavor To Chicken Thighs. Boneless Breasts Could Also Be Used.
