Antipasto Melts Recipe


  • You'll need oversized slices from a large loaf of peasant bread to support the substantial ingredients in this eat-with-a-fork sandwich. Look for tapenade (a puree of black olives) in the Italian section of your local market.
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon black olive tapenade
  • 4 slices large crusty peasant loaf (1/2-inch-thick)
  • 16 slices genoa salami
  • 8 slices capicola
  • 4 very thin slices red onion
  • 4 slices mozzarella cheese
  • 4 slices provolone cheese
  • 2 cups baby spinach
  • 1 tablespoon balsamic vinegar
