Autumn Pot Roast With Coffee Gravy Recipe

Ingredients

  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 large chuck roast, trimmed of excess fat, about 4 to 5 1/2 pounds
  • 1/4 cup vegetable oil (canola or similar light-tasting oil)
  • 1 large white onion, coarsely chopped
  • 4 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup baby carrots
  • 1 cup sliced fresh mushrooms
  • 2 cups water
  • 2 cups freshly brewed coffee
  • 1 tablespoon flour (instant is best, but regular flour will do;
  • cornstarch or arrowroot also works well
  • 2 tablespoons butter, chilled
  • salt and freshly ground pepper, to taste
