- 2 pounds all natural ground turkey, shaped into 6 burgers (for moister burgers, a mix of white & dark meat)
- 6 slices fresh pineapple, cored
- cucumber & Tomato chutney (recipe follows)
- mango Curry Sauce (recipe follows)
- Romaine, thinly sliced
- 2 Tbs. olive oil for brushing buns
- 6 Brioche or good quality hamburger buns
- Kosher or sea salt
- Freshly ground pepper
- 1/2 english cucumber, quartered lengthwise, seeded & thinly sliced
- 1/2 pint grape tomatoes, halved
- 1/2 small red onion, halved & thinly sliced
- 1 Tbs. fresh mint, finely chopped
- 1 jalapeno, seeded & finely chopped
- 1/2 cup fresh lime juice
- 1 Tbs. sugar
- 1/4 cup water
- 1/2 cup Mango Chutney- medium hot
- 1/2 cup Greek yogurt
- 1/2 cup mayonnaise
- 2 tsp. curry powder
- 1 Tbs. fresh cilantro leaves, finely chopped
- 1 tsp fresh ginger, finely minced
- 1 tsp fresh lemon juice
