These Are A Staple In Traditional Chinese Restaurants. Unfortunately, The Store-bought Variety Tends To Be Hard And Tasteless. But This Version Is Wonderfully Light, With A Crisp Edge And Chewy Center. The Traditional Cookies Are Also A Dull, Dark Yellow
