- 1- 2-1/2 lb pork tenderloin

- 1/2 large onion,chopped
- 1 15 oz. can coconut milk
- 1/2 c papaya,diced
- 1/2 c golden raisins
- 1/2 c dried pineapple,diced (I used apricots,didn't have pineapple)
- 1/2 tsp powdered ginger
- 2 tsp Sweet curry powder
- 1/2 tsp cinnamon
- 1 c chicken stock
- 1/2 TB fresh chopped cilantro(optional)
