- ½ cup white rice flour
- ½ cup potato starch
- ½ cup cornstarch
- ¼ cup corn flour
- ¼ cup tapioca flour
- 1 tsp xanthan gum
- 1 cup very cold butter
- 6-8 tbls very cold water (approx.)
- lemon Filling
- 1-1/2 cups sugar
- 6 tblsp cornstarch
- ½ tsp salt
- 1-1/4 cups water
- 2 tblsp butter
- 1 tsp grated lemon peel
- 4 to 5 drops yellow food coloring, optional
- 1/2 cup lemon juice (or less if you like it less tart)
- cream cheese Filling
- 2 pkgs (1-8 oz, 1-3 oz) cream cheese, softened
- ¾ cup powdered sugar
- 1-1/2 cups whipped topping
- 1 tblsp lemon juice
Description
This Is A Bit Time Consuming But Still My Absolute Favorite Pie. You Can Shorten The Prep Time By Purchasing A Pre-made Gluten-free Pie Crust. Just Remember That It Needs To Be Refrigerated Overnight Before Serving.
