Gluten-free Lemon Cream Pie Recipe

Ingredients

  • Crust
  • ½ cup white rice flour
  • ½ cup potato starch
  • ½ cup cornstarch
  • ¼ cup corn flour
  • ¼ cup tapioca flour
  • 1 tsp xanthan gum
  • 1 cup very cold butter
  • 6-8 tbls very cold water (approx.)
  • lemon Filling
  • 1-1/2 cups sugar
  • 6 tblsp cornstarch
  • ½ tsp salt
  • 1-1/4 cups water
  • 2 tblsp butter
  • 1 tsp grated lemon peel
  • 4 to 5 drops yellow food coloring, optional
  • 1/2 cup lemon juice (or less if you like it less tart)
  • cream cheese Filling
  • 2 pkgs (1-8 oz, 1-3 oz) cream cheese, softened
  • ¾ cup powdered sugar
  • 1-1/2 cups whipped topping
  • 1 tblsp lemon juice

Description

This Is A Bit Time Consuming But Still My Absolute Favorite Pie. You Can Shorten The Prep Time By Purchasing A Pre-made Gluten-free Pie Crust. Just Remember That It Needs To Be Refrigerated Overnight Before Serving.
