Aunt Vics Cheesy Potatoes Recipe


  • 2 lb frozen shredded hashed brown potatoes, thawed (I've never thawed them first)
  • 1/2 C melted butter
  • 1/2 C chopped onion (optional-I almost always use dried minced onion in this recipe)
  • 1/2 C chopped red bell pepper (optional-I like to use a combo of whatever color peppers I have on hand...the more the better!)
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 1-2 tsps garlic salt
  • 1/2 tsp crushed red pepper
  • 10 oz can cream of chicken soup (low fat, no problem)
  • 1 C sour cream (I always use fat free w/excellent results)
  • 2 C shredded cheddar cheese
