Ingredients
- 2 T. EVOO (extra virgin olive oil)
- 1 T. butter
- 2 leeks, white part only, cut into 1/2 inch slices
- 1 med. onion, thinly sliced
- 4 scallions, both white and green parts, cut into 1/2 inch slices
- large clove of garlic, minced (you can never have too much garlic)
- 5 zucchini, unpeeled, cut into 1/2 inch slices (about 2 cups)
- 2 medium potatoes, peeled, cut into 1/2 inch slices
- 4-5 cups vegetable stock
- 1 T. lemon juice
- sea salt and pepper to taste
- 1 tsp. each marjoram, thyme, rosemary and savory - or, to taste
- 2 tsp. worcestershire sauce
- 1 cup heavy cream (or more, as needed)
- 2 T. chopped chives for garnish
