Chicken Salad The Way I Like It Recipe

Ingredients

  • 1 whole (2 halves) skinless boneless chicken breast, cooked (rotisserie or grilled will do, too)
  • 1 medium carrot
  • 2 stalks celery
  • 1/2 Granny Smith apple
  • 1/4 cup walnuts
  • 1/2 red bell pepper (optional)
  • 2-3 scallions (optional)
  • 2 Tbsp mayonnaise
  • 2 Tbsp plain yogurt
  • 1 tbsp spicy mustard
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 lemon juice
  • dash of sweet paprika
  • fresh herbs of your choice
