Eds Cranberry Waffles With Orange Sauce - Diabetic Friendly Recipe

Ingredients

  • Pre coat the waffle iron
  • Ingredients:
  • 1 ½ cups nonfat yogurt
  • 1 ½ cups Fat Free cottage cheese, or 1 ½ cups soft tofu
  • 1 ½ cups low-fat buttermilk
  • 1 Tbs. vanilla extract
  • 2 cups all-purpose flour
  • 1 Tbs. baking powder
  • 3 egg whites
  • ½ cup sugar or equivalent ½ cups sugar substitute
  • 1 cup fresh or frozen cranberries, finely chopped
  • 2/3 cup slivered almond nuts chopped ( optional )
  • Non stick cooking spray
  • Optional: Top with lite Cool Whip
  • orange Sauce:
  • 3 Tbs. margarine
  • 1cup honey, or 1 cup light corn syrup
  • 3 Tbs. Freshly squeezed orange juice
  • 2 Tbs. Finely grated orange zest
  • Optional: whipped cream or Lite Cool Whip
