Ingredients
- 1 small or medium-sized whole fish, gutted - trout works well, or sea bass, or talapier. Discard head if desire.
- SAUCE:
- 1/3 cup water
- 13 cloves garlic
- 1 tsp. brown sugar
- 1 ginger, peeled and sliced
- 1 cup fresh lemon leaves thinly slice
- 2 Tbsp. fish sauce
- 2 Tbsp. oyster sauce
- 2 Tbsp. thick soy sauce
- 1/2 green bell pepper, de-seeded and diced
- 1 fresh red chilli, de-seeded and diced
- 5-10 leaves of basil
- 2 Tbsp. olive oil
