- eggs, LARGE, 7
- sugar, 3/4 CUP PLUS 2 TABLESPOONS
- salt, 1/4 TEASPOON
- GANACHE TOPPING (OPTIONAL)
- bittersweet chocolate, CHOPPED, 4 OUNCES
- heavy cream, 1/2 CUP
- OPTIONAL:(BEFORE GANACHE GOES ON cake
- preserves, CHERRY, apricot, STRAWBERRY. I BUY THIS PRESERVE FROM LONDON IT IS STRAWBERRY champagne.

- HOMEMADE whipped cream
