  • bittersweet chocolate, CHOPPED, 14 OUNCES. I USE THE DARKEST CHOCOLATE I CAN, I USUALLY USE 70%
  • eggs, LARGE, 7
  • sugar, 3/4 CUP PLUS 2 TABLESPOONS
  • salt, 1/4 TEASPOON
  • GANACHE TOPPING (OPTIONAL)
  • bittersweet chocolate, CHOPPED, 4 OUNCES
  • heavy cream, 1/2 CUP
  • OPTIONAL:(BEFORE GANACHE GOES ON cake
  • preserves, CHERRY, apricot, STRAWBERRY. I BUY THIS PRESERVE FROM LONDON IT IS STRAWBERRY champagne.
  • OPTIONAL: TO SERVE
  • HOMEMADE whipped cream
  • fresh strawberries
