Ingredients
- 1 Pound of nice marbled Chuck,grind,you will need the fat for flavor.
- With a gentle,quick hand,shape into 4 patties,as not to make a dense patty...or break down the fat with the heat of the hand.You want that to accrue on the hot cast iron grill.Lay the patties in a bath of:
- 1/4 Cup sugar
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoon fresh ground black pepper
- 1 teaspoon fennel seed
- 1 beef Cube,crushed
- 1 teaspoon coriander
- 1 Tablespoon A-1 Steak Sauce
- 2 teaspoon Heinz 57
- 3 Tablespoon Fresh lemon juice
- 1 teaspoon cider vinegar
- 1 Tablespoon worcestershire sauce
- 1 Tablespoon soy sauce
- 2 Tablespoon oil

- Allowing the patties to snuggle down into this for about 15 minutes in the refrigerator.
- Left out of this,and onto waxed paper to rest on the counter for about 15 minutes.
- Cook for 3 to 4 minutes on each side on a hot grill.
- Introduce the patties to a warm platter,covered, to bring the juices back to the center.
- Using real butter,butter the buns and brown in or on the same pan or grill that the patties were cooked.
- Just skim the surface of the browned bun with mayonnaise,(I use Miracle Whip).
- Place the cooked hamburger patty on this side of the bun.
- Top with sauteed red onions that have been cooked in butter,sprinkled lightly with brown sugar at the last of the cooking,to throw a golden hew to them.
- Place fresh juicy tomato,dill pickle,crisp lettuce on top.
- Dressing the other bun half with mustard and ketchup
