  • 1 ½ cups (150 g) Cookin’ Greens kale (or frozen, chopped kale or other dark greens)
  • 1/4 cup canola oil
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup honey
  • 2 tbsp maple syrup
  • 2 packets stevia (or 1 tbsp sugar), optional
  • ½ cup low-fat milk
  • 1 tbsp vanilla
  • 1/2 tsp orange extract (optional)
  • 1 large, over-ripe banana
  • ½ cup wheat germ
  • 1 tbsp whole teff (optional)
  • 1 1/4 cups spelt flour
  • 2 tbsp ground flaxseed
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup shredded carrots (about 1)
  • 1 apple, skin on and minced
  • ½ cup dried cranberries
  • 1/4 cup miniature semisweet chocolate chips
  • 2 tbsp cacao nibs
  • 8 dried apricot halves, slivered
  • 1/4 cup goji berries
  • 1/4 cup toasted sesame seeds
