Arroz Con Camerones Recipe

Ingredients

  • 1 tablespoon olive oil plus 1/4 tablespoon ancho chili powder
  • 1 small red onion finely chopped
  • 4 scallions finely chopped
  • 1/4 red bell pepper chopped
  • 1 jalapeno pepper seeded and chopped
  • 1 tablespoon hot pepper flakes
  • 2 cloves garlic minced
  • 1 tomato peeled seeded and chopped
  • 1 tablespoon red wine vinegar
  • 2 cups clam broth
  • 1 pound large shrimp peeled and deveined with shells reserved
  • 1 cups basmati rice
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
