- 2 lbs. of chicken breast meat
- 1 tsp. each of chopped garlic and ginger
- 2 tsp. of Chinese five spice
- 1/4 cup of light oil
- 3 tbls. of sweet teryaki sauce
- ---SALAD---
- 12 oz. of soba noodles (made from buckwheat)
- 1 large carrot
- 1 large cucumber
- 1 cup of baby corn
- Half a small napa cabbage
- 1 bunch of scallions
- 5 oz. of the ubiquitous shitake mushrooms
- 1 large red bell pepper
- ---DRESSING---
- 1/3 cup of rice vinegar
- 2 tbls. of soy sauce
- 2 tsp. sugar
- 3 tsp. of sake
- 1 smaller sized white onion
- 1 tsp. of ginger (minced very finely)
- 2/3 cup of very good quality vegetable oil
- 2 tbls. of sesame oil
- salt, white pepper
