Ingredients
- For butter cookie Crust
- 1 stick butter, softened(no subs)
- 2 cups flour
- 1 egg
- 1t vanilla
- 1/2t baking soda
- 1/2 cup sugar
- dash of salt
- 6oz butterscotch chips
- For rhubarb pear Filling
- 2 cups cooked, sweetened rhubarb(frozen is fine, just thaw it :)
- 2 large pears, diced(don't worry about peeling
- 2T honey
- 1t vanilla
- 1/4t fresh ground nutmeg
- 1T cornstarch or arrowroot powder(arrowroot is preferred)
- For Streusel Topping
- 1/2 stick butter, cold
- 1/2 cup brown sugar
- 1/2 cup flour
- 1 cup oats
- 1/2 cup (1 stick) cold butter, diced
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup whole oats
