Rhubarb And Pear Butterscotch Tart Recipe

Ingredients

  • For butter cookie Crust
  • 1 stick butter, softened(no subs)
  • 2 cups flour
  • 1 egg
  • 1t vanilla
  • 1/2t baking soda
  • 1/2 cup sugar
  • dash of salt
  • 6oz butterscotch chips
  • For rhubarb pear Filling
  • 2 cups cooked, sweetened rhubarb(frozen is fine, just thaw it :)
  • 2 large pears, diced(don't worry about peeling
  • 2T honey
  • 1t vanilla
  • 1/4t fresh ground nutmeg
  • 1T cornstarch or arrowroot powder(arrowroot is preferred)
  • For Streusel Topping
  • 1/2 stick butter, cold
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 cup oats
  • 1/2 cup (1 stick) cold butter, diced
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup whole oats
