Ingredients

  • 1lb penne pasta
  • 2T butter
  • 4 cloves garlic, minced
  • 1/3 cup white wine
  • 2 1/2 cups heavy cream
  • 1 cup chicken or veggie stock
  • 1/2 cup clam juice(can sub more broth, if desired)
  • 12-16oz raw or cooked crawfish meat(can sub crab or lobster meat, if available and/or preferred)
  • 8 oz fresh mushrooms, sliced
  • 2t Old Bay Seasoning
  • 2T Cajun, Creole or similar seasoning
  • 1t dry mustard
  • dash of hot sauce(optional)
  • about 1t fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • salt and fresh ground pepper
  • 1/2 cup fresh parmesan cheese, grated.
