- 2 1/2 cups heavy cream
- 1 cup chicken or veggie stock
- 1/2 cup clam juice(can sub more broth, if desired)
- 12-16oz raw or cooked crawfish meat(can sub crab or lobster meat, if available and/or preferred)
- 8 oz fresh mushrooms, sliced
- 2t Old Bay Seasoning
- 2T Cajun, Creole or similar seasoning
- 1t dry mustard
- dash of hot sauce(optional)
- about 1t fresh lemon juice
- 1/4 cup fresh parsley, chopped
- salt and fresh ground pepper
- 1/2 cup fresh parmesan cheese, grated.
