Almost A Meal In A Muffin Recipe


  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 1 teaspoon cinnamon (can add other spices, allspice, ginger, etc)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 ripe bananas
  • 3 tablespoons blackstrap molasses
  • 1/2 cup apple juice, (a little more if needed)
  • 2 teaspoons apple cider vinegar
  • 1 zucchini*, finely grated (about 1-1/2 cups, squeeze water out)
  • 1/2 cup finely chopped or ground nuts (walnuts, pecans)
  • 1/2 cup raisins, (or cranberries, or chopped prunes)
  • * May use grated apple
