Ingredients
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- 1 teaspoon cinnamon (can add other spices, allspice, ginger, etc)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 ripe bananas
- 3 tablespoons blackstrap molasses
- 1/2 cup apple juice, (a little more if needed)
- 2 teaspoons apple cider vinegar
- 1 zucchini*, finely grated (about 1-1/2 cups, squeeze water out)
- 1/2 cup finely chopped or ground nuts (walnuts, pecans)
- 1/2 cup raisins, (or cranberries, or chopped prunes)
- * May use grated apple
