Apple-boysenberry Cake Recipe

Ingredients

  • 2 cup water
  • 2 cup frozen unsweetened boysenberries or (about 8 ounces) blackberries
  • 1 cup sugar
  • 1/4 cup Passover brandy
  • 1 tbl fresh lemon juice
  • 4 1/2 lb golden delicious apples (about 9 medium-large), peeled,cored, each cut into 12 wedges
  • 1 x Passover sponge cake (13-ounce)
  • 2 cup sliced almonds toasted
  • 12 x soft almon macaroons finely crumbled (about 1 1/2 cups)
  • 6 tbl unsalted margarine melted, cooled (3/4 stick)
  • 1/2 cup apricot preserves
  • 2 tbl Passover brandy
  • 1 1/2 cup chilled whipping cream
  • 3 tbl sugar
  • Additional toasted sliced almonds
