Ingredients
- 2 large chicken breasts, cooked and shredded(I just poached mine with minced onion, garlic and lots of black pepper, in chicken stock)
- 3T peanut or olive oil
- about 3 cups broccoli slaw
- 4 green onions, cut into 1 inch pieces
- 2 pieces crystallized ginger, chopped
- 1 bell pepper, diced and/or 2 hot peppers, diced or chopped
- 2T hot Chinese mustard(or sub a milder version, if desired)
- 1t rice vinegar
- about 2t lemon grass, chopped or 2t Thai blend seasoning
- 1/2 cup dry roasted peanuts
- cilantro
- 4 servings basmati or jasmine rice, cooked
- For Peanut Sauce
- 1/2 cup peanut butter
- 1/4-1/2t dried pepper flakes
- 1/4 cup hoisin sauce
- 2T honey
- juice from 1 lime
- 1/4 cup orange juice
- couple T water, if needed, to thin

A Spicy Peanut Sauce Is Tossed At The Last Minute With Quick Fried Veggies And Chicken That Have A Lil Kick Of Their Own. Serve This Over Basmati Or Jasmine Rice And Top With A Few Extra Peanuts And Cilantro For A Great Lunch Or Light Dinner. The Photo
