Low-fat Lemon Poppy Seed Cake Recipe

Ingredients

  • 1 cup brown sugar
  • 1/4 cup (1/2 stick ) unsalted butter, softened
  • ½ cup applesauce
  • 1 large egg, at room temperature
  • 2 egg whites, at room temperature
  • 3/4 cup low-fat milk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour (I used whole spelt flour)
  • 2 Tbsp poppy seeds
  • 3 Tbsp lemon juice
  • 2 Tbsp grated lemon peel
  • 2 tsp baking powder
  • 1/4 teaspoon salt
