Ingredients
- 2 c leftover chicken--white meat is OK
- 2 c sliced fresh mushrooms
- 3 T butter
- 2 T all-purpose flour
- 1 c milk
- 1 c chicken broth (if you have juices left from the chicken, they would be wonderful here)
- 1/4 t curry powder--no more--if you really must, NO MORE than 1/2 t
- 2 t Dijon mustard
- 4 oz mild cheddar cheese, chopped in chunks
- salt and pepper to taste (you may not need any salt), and a squeeze of lemon juice
- slivered or chopped roasted almonds, if desired

Leftover Chicken Can Be Obnoxious If Reheated. THIS Recipe Makes You Want To Have Extra Chicken On Hand! Serve Over Steamed Rice With Fresh Green Beans. If You Make This With Leftover Turkey, Some Chunks Of Apple Would Be A Good Addition.
