Gorgeous Quinoa-stuffed Acorns Recipe

Ingredients

  • 2 medium acorn squash, halved lengthwise, seeds removed
  • 2 Tbs Earth Balance "margarine"
  • 4 Tbs pure maple syrup
  • For Stuffing:
  • 2 c quinoa prepared per package instructions
  • 8-10 baby bella mushrooms, sliced
  • 1/2 white onion, chopped
  • 10-15 fresh basil leaves, chopped
  • 1c dried cranberries
  • 1/2c chopped pecans
  • salt and pepper to taste
  • 1/4 tsp cumin
  • 1/4 tsp thyme
  • 1/4 tsp cinnamon
