  • 1 14 oz can artichoke hearts drained and cut into bite size pieces
  • 1 tablespoon olive oil divided
  • 1/2 cup minced green onions
  • 5 eggs
  • 4 pieces of bacon fried crisp and crumbled(optional)
  • 2 tablespoons parmesan cheese
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon salt
  • black pepper to taste
