- 1/2 cup orange juice
- 1/4 cup minced garlic, divided
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Cranberry-Citrus salsa
- Garnish: Italian parsley sprigs
- Preparation
- Peel shrimp, leaving tails intact; devein, if desired.
- Citrus Salsa:
- 1 pink grapefruit, peeled, sectioned, and chopped
- 2 teaspoons grated orange rind
- 1 orange, peeled, sectioned, and chopped
- 1 cup fresh cranberries, halved
- 1/2 green bell pepper, diced
- 1/4 cup chopped purple onion
- 1 garlic clove, pressed
- 2 tablespoons minced Italian parsley
- 2 tablespoons orange juice
- 1/4 teaspoon salt
