Apple Cider Beignets With Butter-bourbon Dipping Sauce

Ingredients

Butter Bourbon Dipping Sauce:

  • 1/2 cup sugar
  • 1/4 stick butter, cut into pieces
  • 2 tablespoons bourbon
  • 1/4 teaspoon cider vinegar
  • 1/8 teaspoon fine sea salt
  • 2 tablespoons heavy cream

Beignets:

  • About 8 cups canola oil, for frying, plus 1 tablespoon for the batter
  • 1 large egg
  • 1 cup sparkling apple cider, at room temperature
  • 1 1/4 cup plus 1/2 cup all-purpose flour
  • Pinch ground cinnamon, optional
  • 1 pound Golden Delicious apples (2 or 3), peeled, cored and sliced into 1/4-inch thick rings
  • Confectioners' sugar, for dusting
