- 1/8 teaspoon fine sea salt
- 2 tablespoons heavy cream
Beignets:
- About 8 cups canola oil, for frying, plus 1 tablespoon for the batter
- 1 large egg
- 1 cup sparkling apple cider, at room temperature
- 1 1/4 cup plus 1/2 cup all-purpose flour
- Pinch ground cinnamon, optional
- 1 pound Golden Delicious apples (2 or 3), peeled, cored and sliced into 1/4-inch thick rings
- Confectioners' sugar, for dusting
