Burnt Almond Cream:

  • 1 1/3 cup blanched almonds
  • 2/3 cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 pound butter
  • 1/2 teaspoon almond extract
  • 1 tablespoon dark rum
  • 1 pinch salt
