- 1 1/2 teaspoons baking powder
- Scant 1/2 teaspoon baking soda

- 6 tablespoons unsalted butter, plus more for greasing pan
- 1/2 cup plus 1 tablespoon good-quality Dutch-process cocoa powder (such as Valrhona or Cocoa Barry)
- 3/4 cup muscovado light brown sugar
- 3/4 cup granulated sugar
- 3/4 cup strongly brewed black coffee, at room temperature
- 3/4 cup buttermilk
- 2 large eggs
- 1 teaspoon pure vanilla extract
Chocolate Chip Almond Meringue:
- 4 large egg whites, at room temperature
- 1 cup sugar
- Pinch cream of tartar
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- 1 ounce bittersweet chocolate, finely shaved
