  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons superfine sugar
  • 2 apples (1/2 pound), to make
  • 1 cup grated apples Vegetable oil, for frying
  • Maple syrup (or confectioners' sugar and ground cinnamon), for serving
