Horseradish Mustard:

• 1/2 cup Dijon mustard mixed with 2 tablespoons prepared horseradish

For the Roasted Red Pepper Relish:

• 3 roasted red peppers, julienned
• 3 cloves roasted garlic, coarsely chopped
• 3 tablespoons extra-virgin olive oil
• 2 tablespoons finely chopped fresh flat-leaf parsley
• Salt
• Freshly ground black pepper

For the hot dogs:

• 8 kosher beef hot dogs
• 8 good quality hot dog buns, split 3/4 through
