Chocolate Bread Pudding with White Chocolate Sherbet

Ingredients

  • 1/2 recipe brioche or 1/2 large bakery challah (about 8 ounces bread)
  • 2 cups half-and-half
  • 2 cups heavy cream
  • 1 pinch salt
  • 1 vanilla bean, split lengthwise
  • 6 ounces semisweet chocolate, chopped
  • 6 eggs
  • 1 cup granulated sugar
  • 1 cup dried cherries
  • Confectioners' sugar
  • White chocolate sherbet, recipe follows

White Chocolate Sherbet:

  • 3 ounces white chocolate
  • 1/4 cup sugar
  • 1 1/2 cups milk
  • 3/4 cup water
  • 1/2 vanilla bean, split
