- 2 cups heavy cream
- 1 pinch salt
- 1 vanilla bean, split lengthwise
- 6 ounces semisweet chocolate, chopped
- 6 eggs
- 1 cup granulated sugar
- 1 cup dried cherries
- Confectioners' sugar
- White chocolate sherbet, recipe follows
White Chocolate Sherbet:
- 3 ounces white chocolate
- 1/4 cup sugar
- 1 1/2 cups milk
- 3/4 cup water
- 1/2 vanilla bean, split
