Ingredients

  • 1 (8 ounces) package cornhusks
  • 4 ancho chiles, lightly toasted, stemmed, and seeded
  • 1 tablespoon cumin seeds
  • 2 teaspoons dried oregano, crumbled
  • 2 teaspoons dried thyme, crumbled
  • 1 tablespoon salt
  • 4 cloves garlic
  • 1/2 cup mild white vinegar
  • 1/2 cup warm water
  • 1 1/2 pounds boneless skinless fish fillets, such as catfish or cod
  • Salt

For serving:

  • Olive oil, for drizzling
  • 1 small onion, finely chopped
  • 1/2 bunch cilantro, leaves only, finely chopped
  • 2 large limes quartered
  • Corn Tortillas
  • 1 avocado, peeled and mashed
  • 1 cucumber, peeled, seeded, and diced
  • 2 serrano chiles, stemmed, seeded and thinly sliced
